A true legacy from my Melaka grandma! Simply open the jar, dilute the paste with equal parts water, and ladle it over your fish. Voilà—your Nyonya Assam Fish is ready!

This paste is also marvelous for stir-frying prawns, squid, tempeh, and tofu. You can even make fried mee hoon; it has a flavour profile similar to Mee Siam but without the dried shrimp. Use it as spread or dip, or get creative and try it in an Asian pasta dish. The world is your oyster!
